Appellation: AOC Pauillac (Bordeaux region, left bank)
Grapes: Cabernet Sauvignon (38%), Merlot (62%)
Terroir: Typical Pauillac gravel terroirs, with silica-gravel for the Cabernet Sauvignon and more clay for the Merlot.
Farming: Sustainable (organic conversion)
Aromatics: This shows smoky character with notes of cassis and plums, bark, toasted oak, wet river rock, smoked tobacco and chocolate. Some mushroom, too.
Palate: Medium-bodied with polished tannins and a velvety mouth-feel. Good mid-palate density with a nice and earthy finish.
About the wine: Dauphin is another second wine of Grand Puy Ducasse, Average age of the vineyard 34 years old. After manual harvesting in small crates and an initial sorting in the vineyard, the grapes are sorted again using the latest generation of optical sorting equipment. Vinification in thermoregulated stainless steel vats and ageing In French oak barrels (15% new).
When to drink: Decant and drink now or 5-6 years after vintage.
Service: 15 to 16 degrees C in Bordeaux glass.
Food match: Grilled meat or grilled tuna, beef stew or a quality home made burger.
