Grape: Malvoisie (aka. Pinot Gris)
Farming: Organic, Biodynamic certified
Aromatics: An intense nose of dried apricot, flowers, peppery spices, almond and clove. There is also a delicious iodine and fresh mineral characteristic.
Palate: Very elegant skin contact wine, with a savoury and subtle mid palate. This is fresh and serious orange wine with flavour of dried apricot, dried lemon, gentle spices and delicate tannins.
About the wine: The grapes are harvested by hand and transported in small boxes to ensure they arrive in optimal quality. In the winery, the grapes are then slowly pressed (whole bunch), 15 days on skin. Natural fermentation with indigenous yeast. No fining and no filtration.
When to drink: Drink now or in the next 3-4 years.
Service: 10 to 12 degrees C.
Food match: Lamb tagine, Chicken Tikka Masala, Grilled octopus, Roast aubergine, Spicy Asian or Indian cuisine, salty cheeses, grilled meats and fish.
