Aromatics: Very elegant and nuanced white, liquorice, fennel, citrus and seaside iodine character.
Palate: Elegant and powerful white, beautiful texture, weight and incredible length. White fruits, citrus and ripe pear. Mineral tension and long sally finish. A very special white!
About the wine: Hand harvest, direct pressing, vinification in thermo-regulated stainless steel tanks. Fermentation with indigenous yeast. Aging in tanks for 12 months on lees, bottled with no fining and no filtration. Only a small amount of So2 is used at bottling and appears on the label.
When to drink: Ready to drink now, potential for aging 6 to 7 years.
Service: 10-12 degrees.
Food match: A gastronomic white, perfect for fish in sauce and seafood.
