About the wine: This cuvee is made from two unique Bordeaux forgotten grapes which David and Helene are trying to bring back to life:Castet, Mancin des Palus. Hand-harvested, destemmed, and fermented with natural yeast. Aged 16 months in terracotta jars, with no fining and minimal sulfur (approx. 30mg/L)
When to drink: Drink now or before 2028.Service: 15 to 16 degrees C. Decant for 30 minutes and enjoy from a Cabernet glass.Food match: Matches well with grilled meats, game, and aged cheeses.
