Apples: blending of bitter, bitter-sweet, sweet and sharp apples varieties.

 

Farming: Organic (certified)

 

Tasting notes: Driven and mineral, Cailloux is savoury and displays beautiful vinous qualities. It's a powerful cider with 7.5% alcohol, generous, energetic and textured with a long dry finish; showing the unique Brittany’s Granit terroir where these trees grow. 

 

About the cider: Cailloux means rocks, like a reminder for Cedric of all the Granit rocks popping out at the surface of his orchards. Stylistically these are the ciders they used to drink back in the day when the locals were eating instead of wine. The trees are hand harvested three times between October and December, before further ripening in crates before pressing up to 4 weeks later. The cider goes through two ferments – the first lasting 5 months before bottling, followed by a 3 month fermentation in bottle. Aging in barrels. This cider is bottled with no sulfur, just pure juice, naturally sparkling and spontaneous, no collage, only racking. No filtration, no residual sugar.

 

When to drink: Drink now or in the next 2 years.

 

Service: 8 to 12 C degrees.

 

Food match: Camembert, Cheddar, semi-hard cheeses like Gruyère, Beaufort and Appenzeller. Roast pork with apple, quiche Loraine.
