Terroir: Limestone on clay, South-West exposure. Lieu dit: ‘Sous Les Grandes Vignes’. Vines planted in 1994, 8,000 vines per hectare.
Grape: Mondeuse
Farming: Organic, Biodynamic certified
Aromatics: Black fruits (including plum), forest berries with notes of black pepper and clove. Subtle whole bunch fragrance and elegant soft oak characteristics.
Palate: Generous and charming, this savoury medium bodied red is balanced and vibrant. The palate is a lovely mix of black fruits, plum, graphite and spices with good tannins and a long lively peppery finish.
About the wine: The grapes are harvested by hand and transported in small boxes to ensure they arrive in optimal quality. Whole bunch natural vinification for 15 days with light foot stumping. Slow press and transfer of the wine by gravity. Ageing in demi-muits French oak barrels.
When to drink: Drink now or in the next 4-6 years.
Service: 14 degrees C. (We recommend decanting this wine when young)
Food match: Mimolette cheese, charcuterie and terrine, barbecued leg of lamb.
