Aromatics: Citrus, mango, pear and subtle almond paste notes, with white flowers and saline iodine touch.
Palate: On the palate this wine is powerful and quite textured, with ripe white fruits, mango and quince. The finish is long, dry and elegant.
About the wine: Planted on rich alluvial soils, it’s often said the finest Fourchaume’s wines should be elevated to the Grand Cru level. On lees until bottling. Unoaked.
When to drink: Drink now or in the next 5-6 years.
Service: 8 to 10 C degrees in large burgundy glass.
Food match: Oysters and Chablis are a classic match. Otherwise, sashimi and other fish dishes, or pungent washed-rind cheeses.
