Aromatics: Floral, citrus aromas and a stony and flinty mineral character.
Palate: Vibrant and pure on the palate with notes of citrus and a beautiful texture. This is a Grand Cru with plenty of depth, personality and minerality.
About the wine: The Grand Cru Blanchot is surrounded by the Grand Cru Les Clos to the North-West and 1er Cru Montee de Tonnerre to the South-East. This is a small 12.39 hectares where Clotilde is fortunate to farm a few rows. Clotilde vines are East and Southeast facing, yet sun exposure is limited which is not a bad thing with global warming. Blanchot remains, paradoxically, a warm terroir. Its steep slope and sheltered location result in slow ripening conditions, with a harvest that generally starts well after that of its neighbour, Les Clos. Climat of Chablis Grand Cru is named after the light colour of its soil and subsoil. The wines are aged on lees until bottling. Unoaked.
When to drink: Drink now or in the next 8-10 years.
Service: 8 to 10 C degrees in large burgundy glass.
Food match: Oysters and Chablis are a classic match. Otherwise, sashimi and other fish dishes, or pungent washed-rind cheeses.
