Palate: Beautiful texture, white peach, great balanced, intensity and minerality.
About the wine: High elevation cool climate vineyard (500 meters), 45 years old vines. The vines sit on acidic terroir made of gneiss and broken-down granite with some pockets of quartz. Hand harvested, low yields. Natural yeast fermentation, malolactic fermentation, 8 months ageing in barrels (old demi-muits). Minimal intervention in the cellar. Low sulphur.
When to drink: Drink now or in the next 3-4 years.
Service: 10 to 12 degrees C.
Food match: Fish with a sauce, shellfish, white meats or fresh goat cheese.
