About the wine: 40 to 80 years old vines on schist terroir. Hand harvested, low yield 35 hl per hectares. Fermentation with natural yeast, ageing 6 to 8 months on lees. Light filtration and low sulphur added.
When to drink: Drink now or in the next 3-4 years.
Service: 10 to 12 degrees C.
Food match: Oysters, mussels, shrimp, salmon in sauce or roasted chicken.
