Soil: The Lavières get their name from the stone found in their sub-soil, which is covered with a very fine layer of stony brown earth (30 cm).

Aromatics: Fragrant and spicy 1er Cru, black berries, red berries, subtle floral notes, violet, peony, roses with a charming yet deep earthy character. Very unique personality as it ages, it develops a soil taste that is reminiscent of the smell of gunflint or smoke.
Palate: Medium bodied 1er Cru, intense and elegant, filled with black berries and red berries. Very fine tannins, spicy peppery taste, beautiful minerality and sense of place with a generous earthy and savory finish.
About the wine: 70 years old vines, 10,000 vines per hectare. An average of 1,200 bottles are produced each year. The grapes are hand harvested, sorted and destemmed, traditional vinification with natural yeasts fermentation, 10 days cold maceration. 14 days cuvaison. Aging for 12 months in old French oak barrels (1 to 3 years old barrel, cooper: Rousseau) Bottled with no fining and no filtration.
When to drink: Ready to drink now or in the next 8-15 years after vintage.
Service: 14 degrees, Pinot Noir glass.
Food match: Boeuf bourguignon, roasted red meat with mushroom sauce, duck.
