Aromatics: On the nose, it shows notes of Meyer lemon, golden pear, quince, toasted almond and a generous well integrated buttery / yeasty character from the ageing in barrel.
Palate: This is a beautiful Hautes Cote de Beaune Chardonnay with plenty of texture and creaminess yet a great tension and length. Incredible value for money in the world of white Burgundy this days. Expect fleshy texture with perfectly ripe apple and pear. Lovely savoury and salty finish.
About the wine: 40 years old vines, high trellising and wide planted vineyard typical of the Hautes Cote. The grapes are hand harvested, sorted followed by a slow pressing and a natural fermentation with indigenous yeasts. Ageing on lees in old French oak barrels for 12 months and then 6 months in tanks. No added winemaking producer even no sulphur during vinification. A small amount of sulphur is added before bottling yet the wines are clean and delicious. Light filtration.
When to drink: Ready to drink now or in the next 5-6 years after vintage.
Service: 12 degrees, Burgundy glass.
Food match: Seafood, fish in sauce and roast chicken.
