Palate: Fresh for a 2010, sleek, and intense with pure fruit flavors. Notes of cedar, herbs (like bay leaf and rosemary), and subtle spice emerge alongside fine, ripe tannins and a driven long finish.
About the wine: Exceptional vintage this 2010 really special wine! Average age of the vines 40 years. Harvested by hand, the grapes are sorted, de-stemmed and lightly crushed. The wine undergoes natural fermentation in temperature-controlled concrete and stainless steel cuves for 3-4 weeks. Regular pumpovers at the beginning of fermentation (2-4 times a day). This cuvee is aged for 12 months in old french oak barrel, concrete tanks and clay amphoras. This wine is unfined, unfiltred. Low sulphur.
When to drink: Be careful not to decant too long as it's an old wine. Drink 15-20 years after vintage.
Service: 15 to 16 degrees C in Bordeaux glass.
Food match: Grilled meat dishes (beef or duck), grilled tuna dish or spatchcock in sauce.
