Aromatics: Fresh cherry, raspberry and redcurrant, with darker berry notes, Mediterranean herbs and a subtle peppery/spicy character. Lovely lifted and brighter style Corsican red.
Palate: Lighter-bodied, juicy and crunchy red, with lively acidity and very fine, gentle tannins. It has a distinctly fresh, almost “thirst-quenching” quality rather than weight or concentration. The finish is dry, bright and slightly saline/mineral, with lingering red fruit and Mediterranean-herb notes.
About the wine: Think chilled, juicy Corsican red rather than a big, structured Mediterranean wine. The winemaking is deliberately gentle, with short maceration to preserve fruit and avoid excessive extraction. 4,000 to 7,600 vines per hectares, 15 years old in average. Low yield 25hl per hectares. Hand harvest in 300 kg boxe, the grapes are deststeemed and go in concrete tanks, then they do a cold pre-fermentation for 48 hours. Fermentation starts naturally with indigenous yeast, with short maceration involving gentle daily pumping over. Aging in stainless steel tanks for about 6 months, bottled without fining or filtration.
